Made by hand, piece by piece from gingerbread, royal icing, marzipan, and chocolate. 

Our signature houses were first created by André Bollier when we opened in 1955, intended to be eaten but also enjoyed as a centerpiece.

The process of creating these structures is part pastry chef and part architect. At age 11, René Bollier learned from his father, second-generation owner Marcel Bollier, how these houses were made and decorated just as his father André taught him. 

The houses are made from 7 different shaped gingerbread pieces, each with the perfect amount of spice to make your taste buds dance. The gingerbread is mixed, cut, baked, covered in chocolate (to help ensure that it tastes as fresh as the day it was baked), glued together with more chocolate, then decorated with candied fruit, nuts, royal icing, and more chocolate.  From the marzipan Santa inside the doorway to the reindeer grazing out on the lawn, every portion of the house is edible. The one-of-a-kind result is wrapped and ready to gift or to help decorate your home, spruce up your mantel, or liven up any holiday gathering.
