When we first opened in 1955, André mixed chocolate almonds in a bowl by hand, blending in chocolate to coat each piece. When André’s son Marcel came into the business two decades later, he introduced a panning method that we use today: We roast fresh nonpareil almonds to a golden brown in a large copper kettle, adding sugar to create a thin caramelized shell; a quintessential crunch. We then mix the almonds with powdered sugar, place them in revolving pans, and drizzle in chocolate. As the pans spin, the almonds collect more and more chocolate as they roll. This process rounds out the chocolate to give an even covering, ensuring that each almond has the ultimate amount of crunch and decadent chocolate coating.
