The prolonged conching in our milk chocolate caramelizes the sugars, giving the chocolate a distinct caramel taste. In the darker chocolate, it helps to highlight the cocoa notes, creating a rich yet balanced flavor profile.
Our milk chocolate is exceptionally smooth and flavorful, boasting notes of caramel, cream, pear and vanilla. Our dark chocolate boasts a rich yet balanced flavor profile with notes of blueberry, dried plum, coffee, and black tea. Our extra dark chocolate is unexpectedly well balanced, rare for high cocoa content chocolate which contains acids and volatiles within the cocoa bean that put forth a bitter taste; the strong cocoa notes and intense chocolate flavor have low acidity without the astringency that most people are accustomed to with extra dark chocolate. What's more, our extra dark chocolate is a powerful source of antioxidants and minerals + contains the many heart-healthy benefits of a high cocoa content chocolate.
