What makes Swiss chocolate special?
Its smooth and creamy texture is the result of extended conching which acts to evenly distribute cocoa butter within the chocolate while promoting flavor development through frictional heat, oxidation and the release of volatiles and acids.
The prolonged conching in our milk chocolate caramelizes the sugars, giving the chocolate a distinct caramel taste. In the darker chocolate, it helps to highlight the cocoa notes, creating a rich yet balanced flavor profile.
Our chocolate
Our signature Swiss milk and dark chocolate are proprietary blends created with beans from the most premier growing regions in the world. While our milk chocolate is exceptionally smooth and flavorful, boasting notes of caramel, cream, pear and vanilla, our dark chocolate exhibits a rich flavor profile with notes of blueberry, dried plum, coffee, and black tea.
Our varieties of single-origin dark chocolate use premium Criollo beans: rare, valuable, and precious delicacies. The beans are local to specific origins with distinct flavor profiles created by the climate, soil, and trees of the regions in which they grow. The strong cocoa notes and intense chocolate flavor have low acidity without the astringency that most people are accustomed to with extra dark chocolate. Each is exceptionally well balanced, rare for high cocoa content chocolate because it contains acids and volatiles within the bean that can put forth a bitter taste.
