peels, candied in-house to ensure a maximum burst of flavor. Each peel (or wedge) is covered three times in our signature Swiss 60% dark chocolate.

Did you know that our Chocolate Candied Orange Peels take anywhere from 2 to 3 weeks to make?

The process begins when we first freshly squeeze the oranges and serve the juice as a beverage in our café and tea room.

We immerse the rind in a solution of salt water to soften the peels and loosen the pulp from inside. After we scoop out the pulp, we cut the peels into perfectly symmetrical strips (or triangles for our newer wedges). Once they are cut, we bathe the rind in a simple syrup and bake them at a low temperature.

After several days baking, we add more simple syrup. The syrup is added daily for a full week allowing the peels to both sweeten yet still maintain their natural citrus flavor.

Once the candying process is complete, the orange peels are run through a chocolate enrober three times, several days apart. The enrober covers them in 60% dark chocolate, which balances the sweetness of the candied orange peels and amplifies their citrus flavor.

The confection has been a customer (as well as a staff) favorite for decades.
