About

These dark chocolate truffles are made with single-origin Criollo cocoa beans from three of the most beloved growing regions around the world.

Similar to wine, single-origin cocoa beans are like grapes from a vineyard, producing chocolate that conveys defined characteristics from a particular soil and vintage.

The cocoa beans used for these truffles are premium Criollo beans: rare, valuable, and precious delicacies. The beans are local to specific origins and boast distinct flavor profiles created by the climate, soil, and trees of the regions in which they grow.

Our confiseurs use Criollo cocoa beans from three of the most premier growing regions around the world, each with varying percentages of cocoa content, and expertly blend them with high-quality butter and cream to create three wonderfully strong yet delicately smooth and luxurious dark chocolate truffles.

Each flavor has a story:

64% Cocoa from Sambirano, Madagascar

Madagascar cocoa is one of the most renowned for its aromas. A large part of the crop originates from the region of Ambanja, located across the Sambirano River. The tropical climate encourages diversified crops and help to support a a robust system of farming and a quality fair trade network. Cocoa is their most important crop alongside vanilla, ylang-ylang, coffee, pepper and rice.

The beans in this region are known for their ripe, intense yet rounded flavor. Located near Lake Maracaibo in northwestern Venezuela, Sur del Lago is one of the oldest and most interesting regions of cocoa cultivation. Its tropical climate with high temperatures, high humidity, shade trees and sufficient water is ideal for growing high quality cocoa. The region boasts a long agricultural history of large plantations growing plantain and cocoa.

72% Cocoa from Esmeraldas, Ecuador

The fruity yet spicy flavor in this chocolate comes from the Arriba beans grown in Esmeraldas. The region is located in the northwestern corner of Ecuador off the Pacific Ocean and at the mouth of the Esmeraldas River, the principal trading hub for the region’s agricultural and lumber resources. Known for its beautiful beaches, exotic plants and animals, Esmeraldas is often referred to as the “green province”. The region is colorful and vibrant with a humid climate known for its production of rice, corn, African Palm, a variety of tropical fruits, and some of the best single-origin cocoa beans in the world.
