The making of

This confection is created by first making a thin yet rich almond cake (or almond roulade), a mixture of which includes choppings of our house-candied orange peel, honey and spices. The cake batter is spread onto sheets and pulled with a sled flat, then baked to a light golden brown. Once cooled, each side is coated with a Grand Marnier infused dark chocolate ganache then left to sit for several hours. Once the ganache is set up, each side is coated with a mixture of chocolate and cocoa butter to create a thin shell so that the confection can be cut into squares. Once cut, the squares are then enrobed in our 60% signature dark chocolate twice before receiving a kiss of gold luster dust.
